Popsicle is run by us, sisters Klara and Kristin.
It all started in an old fire station on the island of Donsö. We originally planned to use it as a studio and showroom for [STRIKK](https://strikk.se?utm_source=chatgpt.com). Then the pandemic happened.
We bought an espresso machine, learned how to make coffee, and started baking.
That’s pretty much how it all began.
What was meant to be a small café quickly became something more. Today, Popsicle is a restaurant, shop, and meeting place — with food, fika, music, and everything in between.
We grew up here on the island, in a fishing family where much of life revolves around the sea.
But also around people.
People greet each other here. They stop and talk.
You end up around the same table — in the kitchen, by the dock, or out by the water.
And it often happens around food. Breakfast, morning fika, lunch, afternoon fika, dinner… and preferably something small later in the evening too. If you’re invited to grandma’s house, it’s never just dinner — there’s always dessert. And then coffee after that.
That’s very much how we think too.
At Popsicle, there should be room for everything — a coffee in the sun, a long lunch, something sweet afterwards, or just a glass of wine and a small bite.
Our fika is baked by Astrid, Klara’s mother-in-law, here on the island. And in the kitchen we have Rebecca, who also grew up on Donsö. It’s important to us that what we do feels close — both in flavour and in people.
At the same time, we love contrasts.
We love that we’ve been able to bring the world to Donsö. One day it’s calm and quiet, the next it’s full of people from different parts of the world. That’s what makes it fun.
Food is a big part of what we do. We work a lot with what we call the blue food of the future — sustainable ingredients from the sea, in season, and with respect for what surrounds us. For us, that feels quite natural considering where we come from.
We’ve always moved between different forms of expression — fashion, textiles, colour, and design. With [STRIKK](https://strikk.se?utm_source=chatgpt.com) as our foundation, we still have one foot in that world, and we enjoy blending it with food. It doesn’t have to be so separated.
Popsicle is our place to experiment, create, invite people in, and have fun.
It shouldn’t feel stiff or pretentious — just good, alive, and a little hard to leave.
